Nutrients and Other Benefits From Our Dish:
These street tacos are incredibly easy to make, and give those making it many options for customization. Firstly, we used perdue chicken shortcuts, which are already pre cooked slices of chicken. This is of great convenience for those who may have worked or went to school all day. We chose to use microwaveable Ben's Rice which creates more convenience for those trying to get a quick and nutritious meal in after a long day. Since we used a higher amount of rice than needed for the tortillas, it creates an abundance of left overs which can be reheated in the microwave or in a pan. We saved lots of time with our chicken and rice preps, so instead we can focus on dicing and chopping the vegetables, which is an important part of our dish. We also used fresh lemon and lime juice, which gave our dish flavor and zest while keeping sodium and added sugar content down. There is also vitamin a found in the diced jalapenos, vitamin A assists with vision and cell division. A high level of sodium can lead to negative health outcomes with high blood pressure. While a high amount of added sugar would metabolize as fat, leading to health problems like heart disease or diabetes. Another positive characteristic of our dish was our use of fresh spices like chili powder, cumin, and black pepper. These spices were low in sodium while giving our chicken a nice Spanish flair. Lastly, we used carb balance tortillas, which were palatable because they still used white flour, but full of fiber, which promotes digestion and good gut health.
Rams Resource Center Additions:
To keep with the assignment, our group used a mix of canned foods and dry food that would be found in the Rams Resource Center. We used canned corn and pinto beans. The pinto beans provided our dish with extra plant protein, protein promotes muscle growth and repair. We also used tortilla's which can be found at the pantry as well. Overall, our dish used low cost ingredients while still providing a quick and nutritious meal.

1 Medium Avocado
1 Red Onion

Our Final Product!
Condensed Instructions: To create these easy street tacos, you start by dicing up the red onion, cilantro and jalapeno. Next up is measuring out the teaspoon of spices into individual cups. The next step is to drain the corn and pinto beans, however it is important to leave the pinto bean water in a separate bowl, as we will microwave the beans in it. Up next is juicing the limes and lemon, and placing the juice in separate bowls. After that is done we will begin to cook the corn salsa, placing the corn, cilantro and half of the lemon and lime juices in the pan. It is important to note that we will add the red onion after the corn is mostly warmed up, or approximately five minutes on low heat. Then the jalapeno slices are last to give our salsa a nice crunch. While the salsa is simmering, we will place the rice into the microwave, then simmer the pinto beans in a small saucepan with the water from the can. Next up is to warm the chicken in the pan, first spreading it in the combined spice bowl to give it plenty of flavor. Then, put the tortillas in the oven on the "warm" setting to crisp up, optionally using some oil to help the crisping process on one side. Because we do not want it to get brown, slicing the avocado comes last, trying to slice it in half and then in julienned slices. Place a tortilla on a taco stand plate to help it stay up, and serve to your level of hunger. This dish is low maintenance, quick, versatile, and easy to make after a long day or school or work. Sprinkle a small amount of Mexican blend cheese and lettuce to finish, then serve warm!
