This week, I prepared the Microwave Chicken Quesadilla for my recipe. I chose this recipe because I already had all the ingredients supplied in my pantry and kitchen. I believe some of the challenges that college students face while trying to maintain healthy and affordable diets are not having enough space to store fresh food, having limited time and access to quality ingredients while owning few (if any) appliances. Cooking in a dorm is difficult because its hard to prepare fresh, healthy food using only a microwave and a mini-fridge. I once lived in a hotel for two months for my job and faced similar circumstances of college students’ dorm life. I survived mainly off microwaved potatoes, canned food, processed and pre-prepared foods for much of the time. You definitely must be creative with what you eat and how you prepare it in order to keep it healthy, taste good, and still be affordable.
I really enjoyed making this recipe. It was nice to make something that was so easy and quick to prepare. I think the taco seasoning made it taste so yummy and added a lot of flavor to the chicken. I also liked how we incorporated bell pepper; I assumed that you couldn’t microwave most raw vegetables and this week I was proven wrong. I found this recipe to be well-rounded, containing plenty of protein, dairy, and vegetable serving sizes. In the future, I think I would make the quesadilla with a whole grain tortilla to add more fiber and whole grains. I would also add black beans or simply make it vegetarian by substituting the canned chicken for black beans. I advise any reader living in the dorms to give this recipe a try because it tastes good, it’s comforting, and it is very easy to make.
