Quesadillas are a Mexican-influenced dish that consists of a tortilla filled with cheese and whatever ingredients you like. This dish is not only easy and affordable to make but it also has essential nutrients. Black beans provide a good source of fiber. This not only adds texture to the dish but also helps lower your cholesterol and decrease your risk of heart disease. Olive oil is rich in antioxidant properties as well as healthy fats. This is a good source of vitamins K and E as well which helps reduce your risk of getting heart disease. Green bell peppers are loaded with lots of healthy vitamins and minerals your body needs. They help build bone strength and support your immune system.
The ingredients to this dish are typically what would be readily available to someone. If someone does not have onions and peppers to use they can substitute in whatever vegetable they want. This simple dish can be made customized for everyone's liking very easily and inexpensively. The quesadillas can also be meal prepped and eaten throughout the week. They are very easy to store and can last a few days in the fridge. You can also make a big quantity of quesadillas for a very cheap price if on a budget. Most of these ingredients you can find in a store for only a few dollars, making it a wallet-friendly meal.

Serving Size: 1 Quesadilla and 1 Cup of Jasmine Rice
Ingredients
4 cups of Shredded Mexican Cheese 5 tbsp of Olive Oil 4 Tomatoes 1 Onions 2 Green Bell Peppers 15.50 oz Goya Black Beans 34.6 oz Uncle Ben's Original Ready Rice Jasmine Rice 4 Tortillas 1 Cup Ortega Taco Sauce (optional) 1 Tbsp Onion Powder 1 Tbsp Garlic Powder 1 Pinch of salt and pepper
Instructions:
Wash and dry 4 tomatoes then dice them and put them into a bowl.
Chop 1 onion and 2 Green Bell Peppers into slices and place in a bowl.
In a medium size skillet at medium heat add 3 tbsp of olive oil. Once the pan has heated up add in the onions and green bell peppers. While sauteing the onions and peppers add in the onion and garlic powder. Sauté them until soft and golden brown. Then remove them from the pan and set them aside.
Wash and drain 15.50 oz of Goya Black beans and set aside in a bowl.
Add a tbsp of olive oil to the pan then place a tortilla on top. Add 1 cup of Shredded Mexican cheese and a cup of black beans to the tortilla. Then add your desired amount of onions, peppers, and tomatoes. This step is optional: drizzle a ¼ cup of Ortega Taco sauce onto the tortilla. Then fold the tortilla in half and cook until golden brown and flip. Repeat this process 3 more times.
Squish Uncle Ben’s original ready Jasmine Rice inside the bag and tear a 2-inch hole in the top of the package for ventilation. Then microwave the bag for 90 seconds on high and serve.
Cut the Quesadilla into thirds and serve with 1 cup of Uncle Ben’s Original Ready Rice Jasmine Rice
