Quick and easy chicken quesadillas and salsa

I was provided with the recipe “Microwave Chicken Quesadilla + Salsa” to make for this week’s lab. Out of all the recipes, I believe this is more convenient for college students living in dorms as well as the simplicity of it. Well, the majority of people wouldn’t mind eating a chicken. Quesadilla with some fresh salsa, it’s a good choice.


Here are the recipes:


Microwave Chicken Quesadilla

Ingredients

for 1 serving

· 2 medium flour tortillas

· ½ cup canned chicken

· ½ bell pepper, diced

· 1 tablespoon taco seasoning

· ¼ cup shredded cheddar cheese

Preparation

1. Microwave the tortillas on a plate until slightly crispy. They will dry out a bit as they cool.

2. Mix the chicken, peppers, and taco seasoning in a bowl until evenly combined, then cook for about 1-2 minutes until the peppers are soft.

3. Spread the mixture evenly on one tortilla, cover evenly with the cheese, then top with the other tortilla.

4. Cook for another 30 seconds to 1 minute, slice, then serve.

5. Enjoy!

Fresh Tomato Salsa (Pico de Gallo) Recipe

Prep time: 6 minutes

Yield: Makes 3 to 4 cups of salsa


Ingredients

· 2 to 3 medium sized fresh tomatoes (1 to 1 1/2 pounds), stems removed

· 1/2 red onion

· 2 serrano chiles or 1 jalapeño chile (stems, ribs, seeds removed), less or more to taste

· Juice of one lime

· 1/2 cup chopped cilantro

· Salt and pepper to taste

· Pinch dried oregano (crumble in your fingers before adding), more to taste

· Pinch ground cumin, more to taste


Method

1 Prep the ingredients: Finely chop the tomatoes, chiles, and onions. Be careful while handling the chile peppers. Use a plastic baggie or disposable gloves to handle them, or wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours.

2 Make the salsa: Place in a serving bowl. Add salt and pepper to taste. Serve.

What I believe are some challenges for college students living in dorms trying to maintain healthy eating habits is the food choices as well as resources. The reason why I say that is because this is my current challenge living on campus and having to follow my diet (1200 Kcal). The choices for food selection aren’t that diverse and the same options keep reoccurring. This can be discouraging and it adds more of a challenge because depending on the dorm there might not be any microwaves or those little kitchens.

I liked how the recipe provided a very quick way and easy to make some dorm-friendly foods. The recipe only requires a microwave which in some cases can be on your floor at your dorm. The recipe also required some fresh ingredients which were needed for the salsa. So the individual can enjoy their quesadilla as well as receiving some veggies from the salsa.

Overall the process was very quick and went well. I used paper plates to give more the feeling I am cooking at a dorm even though I was cooking on campus. I can see how the chicken breast canned and the taco seasoning can be very useful because it can last a while on the shelf. Which gives college students more of an advantage when it comes to preserving. The advice I would give to a reader who wants to make it in their dorm room is that you should. The only challenge you might come across is where to cut the fresh ingredients. Other than that it is very convenient and tasted good so it’s a very good choice if your running on a little time limit before class.
