Peanut butter Banana Butterfly

I chose to make a Peanut butter banana butterfly toast as my meal. I chose this dish because not only will it satisfy a child with its delicious sweet flavor but it has its eye- opening butterfly shape flying in the egg white clouds. Not only is this dish visually appealing, but brings back so much nostalgia with its fun take on the classic peanut butter banana sandwich that we all loved in our childhood. This meal has good sources of plant based protein and and non- plant based protein from the peanut butter, and egg whites. It also adds great sources of fiber from the variety of fruit being raisins, bananas, and raspberries. lastly, this dish contains the right amount of calories to give your child enough energy to make it through the morning, heading right into lunch in the afternoon. If you want to start the weekend with a low cost, fun and simple breakfast for your child, this is the perfect meal for you.



Yield: 1 serving

Recipe:

  • 1 slice whole wheat bread

  • 1/2 medium banana

  • 1 Tbsp Jiff creamy peanut butter

  • 1 oz cup of dried raisins

  • 1 oz raspberries

  • 2 large egg whites

Instructions:

  • Take one slice of whole wheat bread and slice in half diagonally from the corners to make a triangular butterfly wing shape

  • On a plate, peel, then cut 1/2 of a medium banana horizontally into thin circular shapes all the way down the entire banana

  • Take 1 Tbsp of Jiff peanut butter and spread evenly onto both pieces of bread

  • Take about half of the banana slices, and spread evenly on both triangular pieces of bread and peanut butter

  • Take the rest of the banana pieces, and line them up in a straight line to create the “body” of the butterfly.

  • Take the 2 triangular pieces of bread with peanut butter, and place one on each side of the horizontal “body” made from the banana to create a wing effect.

  • Take about 1 oz of raisins to create the antennas of the butterfly. Do this by lining up the raisins above the banana body in 2 lines to create the antennas. Drizzle the remaining raisins on the peanut butter wings or anywhere else as desired.

  • Take about an ounce of raspberries and sprinkle over the wings, and body of the butterfly to add color and “jam”flavor.

  • Once the butterfly has its completed shape, take 3 large eggs. Separate the egg whites from the yolk. Combine the 3 large egg whites in a bowl, and whisk for about a minute until completely mixed.

  • Take a medium sized non stick pan, turn on medium heat, then pour the egg whites on top. Take a spatula and scramble the eggs on the pan until the egg is completely cooked, this should take about 1-2 minutes. Once the egg whites are fully cooked, season as desired (salt and pepper) then spread the scrambled egg whites on the plate above the “butterfly” in the shape of clouds.

  • Once all ingredients are assembled and seasoned as desired, the dish is ready to be served.
