Kimchi Udon Stir-fry Noodles


South Korea, a dynamic and culturally diverse nation located in the eastern region of the vast continent of Asia is the origin of this dish. South Koreans place particular importance on kimchi in their daily diet. It is a basic side dish that is served with practically all Korean meals. Kimchi is so important to the people of this country that they consider a meal incomplete without it. The use of rice, a wide variety of fresh vegetables, and seafood form the main components of Korean cuisine. The unique flavors that Korean food is known for worldwide are produced by the combination of these ingredients.

Detailed Instructions

First put in 3 quarts of water into a bowl and let it boil as you prepare the ingredients that get added with the noodles later on. The water is on a high heat stove, it is done first because it takes longer to boil. As the water is boiling gather the ingredients needed for the dish, sauce, and garnish.


Ingredients needed for the dish: you will need some

vegetable oil, 9oz udon noodles, 8 slices of bacon that are

cut into thumb sized pieces, 2 cups of aged kimchi, 2/3 cups of yellow onion that are cut as thin

slices, and 1/2 cup green onions are also thinly sliced. use separate bowls.

Now, prepare the sauce by putting these following ingredients into one bowl: 1 tbsp Korean chilli flakes, 1 tbsp Korean chilli paste, 2 tbsp soy sauce, 2 tbsp honey, 2 tbsp raw sugar, 1 tsp minced fresh garlic, 2 tsp sesame oil. Mix it all together.


Lastly, prepare the garnish if desired but it is optional. What you will need is a few sprinkles of black pepper, 2 tsp of roasted sesame seeds, 2 tbsp thinly sliced green onions, and a few strips Korean roasted seasoned seaweed.


Now that the water is boiled and you have all the

ingredients prepared, insert the udon noddles into the pot with boiling water for about 4 minutes. While the udon noodles are boiling, grab a pan, set stove on medium-high heat. You want to let it heat up a little and then add some vegetable oil, spread the oil across the pan. Then add the the cut up bacon

into the pan for 2-3 minutes while occasionally stirring so it can start cooking.


After the 2-3 minutes has passed, add the yellow onions and the kimchi to the pan for about 1 to 2 minutes until they are wilted. Now is also a good time to turn off the stove for the udon noodles and drain them, then set aside for now.




Now grab the prepared sauce and add it into the pan with the rest of the ingredients. After adding the sauce, you can now add in your udon noodles along with 1/2 cup of green onions and mix well. Place the noodles in a serving bowl and add any desired garnish mentioned above and enjoy!

Serves 4

Ingredients: 

Main 

  •  9 oz udon noodles 

  •  8 slices of bacon, chopped into thumbnail size pieces (*see note) 

  • 2 cup aged Kimchi, chopped into thumbnail size pieces 

  • 2/3 cup yellow onion, thinly sliced 

  • 1/2 cup green onion/scallions, thinly sliced 

  • Some vegetable oil 

Sauce (Mix these in a bowl) 

  • 1 Tbsp Korean chilli flakes (gochugaru) 

  • 1 Tbsp Korean chilli paste (gochujang) 

  • 2 Tbsp soy sauce 

  • 2 Tbsp honey 

  • 2 Tbsp raw sugar 

  • 1 tsp minced fresh garlic 

  • 2 tsp sesame oil 

Garnish (These are optional, but they certainly enhance the flavor!) 

  • A few sprinkles of ground black pepper 

  • 2 Tbsp roasted sesame seeds 

  • 2 Tbsp green onion, thinly sliced 

  • Few strips Korean roasted seasoned seaweed 


Instructions: 

1. Boil the udon noodles per manufacturer’s instructions. Drain the water. Set aside. (Ideally, step 

1 and step 2 should start at the same time so that you use the fresh, warm and not sticky 

noodles.) 


2. Heat a pan/skillet on medium-high heat and once heated add some cooking oil and spread it 

thinly. Add the bacon and cook for 2 to 3 mins. Stir occasionally. 


3. Add the onion and Kimchi and cook until they are wilted (about 1 to 2 mins). Add the sauce and 

mix them well. 


4. Add the udon noodles and mix them with the rest of the ingredients. Add the green onions and 

stir lightly. 


5. Serve the noodles on a plate and garnish with the ground black pepper, more green onions, 

sesame seeds, and seaweed strips.
