Are you a college student living in a dorm?? If so, this recipe is for you. You can eat this for breakfast, lunch or dinner …and its super easy! I chose this recipe because I really like eggs and eat them several times a week. It can be modified to include the ingredients you like to eat. This recipe included everything that I like.
As you can see I have healthy ingredients in my recipe. Two eggs beaten, baby spinach, red bell pepper, ham and cheese. Mix together and put into a mug for 3 minutes in the microwave. Very easy!
This will be my new "go to" healthy recipe when in a hurry or just don't feel like going to the cafeteria.

Microwave Omelet in a Mug
Ingredients
for 1 serving
· 2 eggs
· ½ bell pepper, diced
· 2 slices ham, diced
· ¼ cup fresh spinach, chopped
· salt, to taste
· pepper, to taste
Preparation
1. Combine all ingredients in a microwaveable mug.
2. Cook for 2-3 minutes, making sure the egg doesn’t bubble over. Stir halfway through the cooking process.
