Dorm-friendly potato wedges and chicken Parm


Microwave Potato Wedges

Ingredients


1 teaspoon vegetable oil

Salt and pepper

Preparation

Cut the potato lengthwise into eight wedges. Rinse in a colander and pat dry with kitchen towel.

Toss the wedges in vegetable oil and season with salt and pepper.

Place the potato wedges on a microwave-safe plate. Cover and cook on high for 4-6 minutes or until tender, turning wedges once.


Microwave Chicken Parmesan TOTAL TIME: Prep/Total Time: 30 min. YIELD: 6 servings.


Ingredients


1 can (8 ounces) tomato sauce 1 teaspoon Italian seasoning 1/4 teaspoon garlic powder 1/2 cup cornflake crumbs 1/4 cup grated Parmesan cheese 1 teaspoon dried parsley flakes 6 boneless skinless chicken breast halves 1 egg, beaten 2/3 cup shredded part-skim mozzarella cheese Directions 1. In a microwave-safe bowl, combine the tomato sauce, Italian seasoning and garlic powder. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside. 2. In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes. 3. Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear.



 

I choose to cook this meal, because i wanted to see if cooking chicken in a microwave would affect its the taste and texture of the meat. i ran unto some difficulty, i don't own a microwave, but i do have a small conventional oven, that i think its pretty similar to the microwave. Cooking one thing at a time, was time consuming, although its a dorm friendly meal, it's definitely not busy student friendly. Most college student don't have enough time in between class and homework to make a meal, or even to go get a meal, which makes it hard for some to stay healthy.


The potatoes wedges where perfect, something super easy to make for a late night snack, they tasted like left over potatoes wedges. But the chicken Parmesan was super dry and a bit chewy. It looked very appealing but did not taste good. I would probably change modified this recipe, instead of getting fresh products, to get frozen chicken tenders, it would be less preparation time, also using a small air fryer would had made the chicken breast more crispy and less chewy.
