An omelet in a microwave? Now that is something rather interesting to think about.
This recipe is a quick and easy recipe that can be made in five minutes and requires very minimal ingredients. When it comes to this recipe, you really only need eggs, salt, and pepper and then you can add in whatever you would like on hand to go in the omelet. I used leftover ham, spinach, and bell peppers. This is a very simple and healthy recipe for college students that are on a budget, need something rather fast, and are craving eggs. Personally this recipe looked really goods and smelled good as well but did not taste the best. The texture was a little off for being an omelet and was a little bland. Next time I think I would try adding a splash of milk and maybe some cheese to it as well just to add more flavor and allow for a better texture. Being a college student can be very challenging at times, especially when it comes to food at school and it may be hard for students to get up early in the morning and eat breakfast so this might be helpful in that way of getting their breakfast in.
The recipe is:
2 eggs
Salt, to taste
Pepper, to taste
handful of spinach, chopped
1/2 bell pepper, chopped
1 slice of ham, chopped
Combine all ingredients in a mug
Microwave for 2-3 minutes or until eggs are cooked, stirring halfway through
Let cool for a minute and enjoy!
