For my dorm friendly meal I decide to make the microwave Chicken Quesadillas and the Fresh Tomato Salsa (Pico de Gallo) recipes. My main reason for choosing this was that I was really craving some chips and salsa this week, so I was able to complete the assignment and satisfy my craving at the same time!
I think that there are a few challenges for college students to make these dishes in their dorm kitchens. There is a lot of chopping of vegetables to be done with the salsa recipe. That takes quite a bit of individual counter space. I think that works better during a time when less students are trying to use the kitchen.
Also, the Chicken Quesadilla recipe takes multiple steps using the microwave. That's fine if there aren't a lot of people waiting to use the microwave. Overall, though, I think if you make these dishes during slow times in the kitchen, this is a great option to eat healthy while living away at school.
I thought making these went well. Both dishes were very delicious. My husband and I had the salsa with chips, guacamole and sour cream one night. Both of us really enjoyed it. I love how the salsa tasted with sour cream on the tortilla chip. The salsa tasted very fresh and healthy. If I was to change anything about the salsa it would be to add some diced bell peppers to the recipe next time.
As for the Chicken Quesadilla, it had a really good flavor. I wouldn't change anything. It tasted warm and filling and had a really good flavor profile.
I'm hoping my kids try out this recipe and decide to make it one of their go to mid day snacks or lunches.
