Who doesn't love dessert for breakfast? Baked oats took off as a trend on TikTok, and its popularity has only grown from there. You can find hundreds of baked oat recipes with different flavors and toppings all over the internet. We specifically chose this recipe to show that sweet treats can also be nutritious!
This recipe is super simple and convenient because you only need a blender and a pan! It is also great for picky eaters because you can switch out toppings based on preferences. In addition, oatmeal is inexpensive, and with so many different ways to make it, it is hard to get tired of it.

Making the Batter:
Begin by preheating the oven to 350°F and greasing a 13 x 9 pan with olive oil cooking spray. Next, blend the oats, cocoa powder, baking powder, salt, soy milk, mashed banana, and maple syrup in a blender for about 30 seconds.
Adding the Walnuts:
Chop up 8 tablespoons of walnuts into small pieces. Pour the blended mixture into the pan and add the walnuts. Stir to spread evenly. Place the pan into the oven and bake for 30 minutes or until cooked through the center.
Preparing the Strawberries:
While the baked oatmeal is cooking, wash and dry the strawberries. Then, cut the strawberries into thin slices. We will be adding these on top once the oat cake has cooled.
Serving the Oat Cake:
Once the thirty minutes is up, remove the pan from the oven and allow to cool in the pan. Once cool, cut into 15 rectangles and plate them. Then, add the strawberry slices on top and enjoy!

Serving Size: 1 rectangle
Ingredients:
2 cup of gluten free oats
4 tbsp dark cocoa powder
1 tsp baking powder
¼ tsp of iodized salt
2 cups of milk (we used soy milk)
1 cup of mashed banana
5 tbsp of real maple syrup
8 tbsp of chopped walnuts *optional
8 tbsp of cut up strawberries for topping *optional
Instructions:
Blend oats, cocoa powder, baking powder, salt, milk, mashed banana, and maple syrup in a blender until combined.
Pour blended mixture into a greased 13 x 9 pan.
Add walnuts on top.
Cook at 350°F for 30 minutes.
Once cooked, remove from the oven and allow to cool for 5 minutes.
Once cool, slice into 15 rectangles. Add strawberries on top and enjoy!
