Brigadeiro is a beloved Brazilian sweet treat with a rich history and cultural significance. Originating in the 1940s, this dessert was created as a symbol of unity and solidarity during Brazil's presidential campaign. Its name pays homage to Brigadier Eduardo Gomes, a candidate in the election. Brigadeiro consists of condensed milk, cocoa powder, butter, and chocolate sprinkles, rolled into delightful bite-sized balls. This indulgent confection has become an integral part of Brazilian cuisine, often served at celebrations and gatherings.

To create Brigadeiro, start by combining 2 cans of sweetened condensed milk, 8 tablespoons of unsweetened cocoa powder, and 4 tablespoons of butter in a saucepan over medium heat. Stir continuously until the mixture thickens and pulls away from the sides of the pan, forming a smooth, glossy dough (approximately 10-15 minutes). Remove the mixture from heat and let it cool to room temperature. Once cooled, grease your hands with butter or oil and roll the mixture into small, bite-sized balls. Finally, coat the Brigadeiro balls in chocolate sprinkles or other toppings of your choice. Serve immediately or store in an airtight container for later enjoyment.


Yield: 24-48 Brigadeiro ball

Serving Size: 1 ball

Ingredients:



  • 4 Tbsp unsalted butter, plus more for hands when rolling balls

  • 2 cans (14 oz) sweetened condensed milk

  • 8 Tbsp unsweetened cocoa powder, sifted

  • Two pinches of salt

  • 6 ounces good quality chocolate sprinkles



Instructions:

  • Start by placing a glass bowl in the freezer to cool.












  • In a pot over low heat, melt 4 tablespoons of butter.

  • Add sweetened condensed milk, cocoa powder, and salt to the melted butter. Stir well.








  • Keep stirring the mixture constantly to prevent burning. Cook until it thickens, which should take about 10-12 minutes.

  • Once thickened, remove from heat.















  • Take out the glass bowl from the freezer and pour the fudge into it. Put the bowl back in the freezer and let it cool to room temperature, checking on it every 10 minutes or so.

  • Spread sprinkles on a plate or shallow bowl.










  • When the fudge is cool, grease your hands with butter and roll it into small balls, traditionally using half a tablespoon as a measurement.

  • Roll the brigadeiro balls in the sprinkles and place them in paper or foil candy cups.

  • Serve the Brigadeiro balls immediately for a delectable treat or store them in an airtight container at room temperature for later enjoyment.
