You heard it right... Blueberry French Toast in a mug is a thing! It seems too good to be true. Regular french toast takes so much time, so much equipment and so much effort and energy. This recipe only takes one mug, 1 bowl, a knife (you could even rip the bread with your hands :), and only takes a minute to prep and a minute and a half to 2 minutes to cook. Maximum time this recipe will take is 3 minutes opposed to 15-20 minutes!
The biggest reason I chose this recipe was pure skepticism, I could not believe an egg could be cooked in the microwave and only take about 1-2 minutes. It was unreal to me because as a kid I was always told "Cook the egg fully or else you can get salmonella poising!" A microwave plus an egg seemed like a pure disaster to me but I took the plunge and tried it out. The recipe said to cook it for a minute and a half but I decided to do 2 minutes because I was still really nervous because I wanted to make sure the egg was fully cooked. I am so glad I decided to take a chance on this recipe because in the past I have done recipes in a mug and they have not turned out but this one was a winner!
Healthy eating in college is a difficult feat because we do not have the luxury and availability of ovens, stove tops, large refrigerators, and much dish-ware, and utensils to use in our dorm rooms. College students also do not have much time to prepare long meals in the morning, for lunches, and at night for dinner because we are always go go go. Being on the run all the time makes it difficult for someone to prepare healthy meals so instead they decide to go to fast food restaurants because its fast and easy. College students do not want to be unhealthy but for us and them it is the convenience factor that rules all!

It requires simple ingredients, fresh blueberries, eggs, bread, vanilla, and milk which are ingredients many households get each grocery run they make! They are simple and easy and there is barely any prep required and it will take a shorter amount of time than getting in your car, ordering a meal, and receiving the meal.The French toast mug cake will be done in seconds and it is a way healthier alternative to getting fast food or processed foods. This meal could be breakfast, brunch or dinner. Whatever floats your boat because it is a nice balanced meal.
Advice to other users:
If you decide to make this recipe, remember to do half the cubed bread then blueberries than the other half of the cubed bread and more blueberries on top because in the directions it says it a little confusing. I actually needed to read the instructions about 5 or 6 times to make sure I was doing everything correctly. I would also recommend starting at 1 1/2 minutes but you may need a 1/2 minute more for the egg to fully cook in the microwave, it all depends on the power of your own microwave. Another tip I would say is that you could make this french toast with other fruits too and I believe maybe even chocolate chips if you want it as a dessert french toast. Also if you make this make sure the measurements are correct because I have done mug recipes in the past and if you do not do them exactly how the recipe is written, it may not come out as you had planned and hoped.

Blueberry French Toast in a Mug
Ingredients
for 1 serving
· 1 slice bread
· 1 egg
· 2 tablespoons milk
· ¼ teaspoon cinnamon
· ½ teaspoon vanilla extract
· blueberry, to taste
· maple syrup, to drizzle
Preparation
1. Slice bread into cubes.
2. In a bowl, add egg, milk, cinnamon, and vanilla, and mix.
3. In a microwave-safe mug, place half of the cubed bread and desired amount of blueberries.
4. Place the rest of the bread, berries, and the egg mixture into the mug.
5. Microwave for 1½ minutes or until egg is fully cooked.
6. Drizzle maple syrup and serve.
