Blueberry French Toast in a mug

The recipe I chose to recreate is the Blueberry French toast in a mug. I decided to create this because I grew up eating french toast for breakfast often on the weekends as a nice treat so the idea of this was almost nostalgic for me. I thought the simplicity of making and eating this right out of a mug was even more fun and appealing, so I dove right into this one.


Recipe:

  • 1 slice of whole wheat bread

  • 1 large egg

  • 2 tablespoons of 1% milk

  • ¼ teaspoon cinnamon

  • ½ teaspoon vanilla extract

  • Microwave safe mug

  • blueberry

  • maple syrup, drizzle











Instructions:

  • Obtain one slice of bread, and cut it into cubes.

  • Get a medium sized bowl, then add the egg, 2 tablespoons of milk, ¼ teaspoon of cinnamon, and ½ teaspoon of vanilla extract. Mix all ingredients well.

  • Take the microwave safe mug, and place half of the cubed bread inside with a small amount of blueberries (or amount as desired) in the mug.

  • Obtain the rest of the egg, cinnamon, milk and vanilla mixture, and pour this into the mug.

  • Place the mug into the microwave, cover the top with a paper towel or napkin, then microwave for about 1 ½ minutes. Make sure the egg is fully cooked before completing.

  • One mixture has been fully cooked, take the mug out of the microwave, then drizzle maple syrup over the mix (amount as desired) and serve!



Many of us have faced the challenge of maintaining a healthy diet, and healthy food choices due to living in a dorm on campus. Even in my own experiences this can be from lack of access to a kitchen, being on a tight schedule for classes, expenses, and lack of self control with fast food choices, even the stress of coursework and exams can cause some to naturally make unhealthy food choices for convenience, and comfort. This blueberry french toast recipe helps tackle these obstacles with convenience, simplicity and low in cost. There are very few ingredients that make this easy to store in a refrigerator, and can be made without needing access to a kitchen. These ingredients will also help make healthier food choices with the egg adding a good source of protein to the diet, and milk for dairy.

My experience creating this recipe for the first time was smooth overall! It was fairly quick under 30 minutes all together. The blueberries overpowered this taste and smell after microwaving. The maple syrup was a needed addition since I felt that mine came out a bit dry in texture. I would add more cinnamon next time for a sweeter and stronger flavor. The smell of blueberries was also overpowering in my entire kitchen which was very nice and also nostalgic. My recommendation for anyone else creating this recipe is to make sure to keep an eye on it while it is microwaving, I did not need to microwave mine for the whole 1 1/2 minutes and it almost overflowed and made a mess. Its appearance was a little messier than I had thought it would look, but adding the toppings and extra blueberries helped make it more presentable and appealing. I would also suggest a nice topping to this dish would be chocolate hummus spread for anyone who has the same large sweet tooth as I do.
