Baking Brigadeiro


Brigadeiro is a sweet treat from Brazil. It originated from when Nestle opened their first factory in Brazil. It became popular because Nestle's main product there was condensed milk. The name "brigadeiro" came from the candidacy of a brigadeiro Brazilian, Eduardo Gomes. It then became a Brazilian dessert staple and is considered a national icon, being found at weddings and other special events.

This Brazilian delicacy is high in carbohydrates which makes you feel full and is what the majority of the body uses for energy. It is also high in sugar, and surprisingly low in fat even though it includes butter and a lot of condensed milk. Brigadeiro is very simple and easy to prepare, low in cost, and gluten free.


 

Making the Batter:

Begin by placing a glass bowl in the freezer to cool. Take a medium heavy pot and put it over medium heat. Melt the 4 tablespoons of butter in the pot, add the sweetened condensed milk, then the cocoa powder and salt. Mix it continually as it cooks to prevent burning and mix until it thickens. To determine this, run your spoon or spatula in the middle of the mixture and if it takes a while for the mixture to move, then it is ready. This should be about a 10-12 minute process.



Shaping the Balls:

Remove the pot from heat and remove the glass bowl from the freezer. Pour the fudge in the bowl, return the bowl to the freezer and let the fudge cool to room temperature. Have it sit for 30 minutes, checking on it periodically. Afterwards, place the sprinkles in a plate or shallow bowl. Once the brigadeiro is done cooling, grease your hands with butter and roll the brigadeiro batter into small balls. Then, roll the balls into the bowl of sprinkles and then place them in paper/foil candy cups.


 

Ingredients:

Serves 24-48

  • 4 Tbsp unsalted butter, plus more for hands when rolling balls

  • 2 can (14 oz) sweetened condensed milk

  • 8 Tbsp unsweetened cocoa powder, sifted

  • Two pinches of salt

  • 6 ounces good quality chocolate sprinkles


Instructions (Condensed):

  1. Place medium glass bowl in freezer to cool.

  2. In medium heavy pot over medium low heat, melt 4 tbs of butter.

  3. Stir in sweetened condensed milk, cocoa powder, and salt.

  4. Cook, mixing constantly so it does not burn, until it thickens. This should take 10-12 minutes. When it is hard to stir, it is ready.

  5. Remove glass bowl from freezer. Pour fudge into the bowl and return it to the freezer. Allow to cool until room temperature, checking every few minutes.

  6. Once it is cool, grease your hands with butter and start rolling the balls, using 1/2 tbs as measurement.

  7. Roll balls in sprinkles and place in a cup.
